This recipe was incredibly easy and by FAR the best potato soup I have EVER had. Gina, this soup looks marvelous! Would using canned potatoes ruin this? Also, I added the bacon bits to the soup. Potatoes and all? OH and I want to add that I am one of those people who almost NEVER gets successful results from recipes that I find on the internet (mainly Pinterest)and especially if they are healthy. I was craving a comfort food such as this but really didn’t want the added calories and fat that is usually involved! I like chunky baked potato soup and I don't have an immersion blender (just a little personal-size blender) – so I mashed the cauliflower/potato/milk mixture instead of pureeing it. So good! Just made this tonight it was super yummy! After I realized I like juicing, I bought this BALLER juicer, which costs $99 and is a #1 seller on Amazon. Has anyone made this without the sour cream? That adds about 50 calories per serving, but I thought it was worth it since I want to get some good fats in my diet and still overall the calories per serving is low. I just doubled it because the first time I made it we didn't have any left over. just input to the WW recipe builder site and found the points listed here as correct – with the bacon. I just use 2 large frozen bags of cauli florets. Thank you for sharing what you changes you made in this recipe. If it’s too runny, you can add a very small amount (apx 1/16th tsp or less) of non-GMO Xanthan Gum to thicken. I also put the bacon in the soup to let it cook and get more of the flavor in the soup. I just made this today. I’m torn on this recipe. The cauliflower is invisible in here! I used frozen cauliflower and I used an electric beater, I dont have a blender, and it was perfect! Much less messy than pouring it into a blender, but don't turn up the speed too much or there will be a mess! Instead I cut up the cauliflower into bite size pieces, added some water to the bowl, covered it with plastic wrap, and microwaved on the fresh vegetable setting until very tender. So yummy and simple to make – especially love that it only has a few ingredients, so easy to pull off when looking for a quick meal! I'm not sure how strong of a cauliflower flavor is in the original recipe so if the added time of roasting it vs steaming it isn't worth it I will just make the soup as is. And I actually leave out the potato totally! First let me say that I love your recipes and truly do not think I could do this weight loss thing without them. You would never know there is cauliflower in there. Add sour cream, half the chives, salt and pepper and cook on low another 5-10 minutes, stirring occasionally. i didnt taste the cauliflower at all. In this recipe, I baked the potato in the microwave, and boiled the rest of the vegetables. Easier than peeling.
